Free Recipe for Lemon-garlic-butter scallops

12 deep-sea scallops (about 1 1/4 pounds)
Salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
1/2 cup white wine
2 lemons, zested and juiced
5 cloves garlic, minced

1. Pat the scallops dry with paper towels and sprinkle with salt and black pepper.
2. Place a large frying pan over medium0igh heat and add the butter.  When the butter stops foaming, add the scallops and cook until browned on both sides, 3 to 4 minutes total.  Remove the scallops from the pan and set aside.
3. Deglaze the pan immediately with the wine and lemon juice.  Add the garlic and cook for 2 minutes, or until the liquid is slightly reduced.  Add the scallops back to the pan and cook until they warm through again. Sprinkle the zest over the top and serve.
